INTRODUCTION
For over forty years I have lived, studied, and worked in one of the most beautiful and sustainable territories in the world: the ancient land of Tuscany. Here history, art, landscape, food and wine are the paradigm of “quality of life”, the essence of an emotional experience for body and spirit.
It was in this wonderful region that, thirty years ago, with my family, I founded La Lastra winery where I produce organic wine and EVO oil. My wines embody the pure essence of the Tuscan region, a unique combination of scents, aromas, and flavours.
This is the place where, twenty years ago, I opened the doors of my house – an old farmhouse attached to our vineyard, which is now known as Agriturismo Marciano. The Agriturismo Marciano is just a small bed and breakfast, but in all these years (and hopefully in the future...) thousands of people from all over the world have met under its roof, bonding over the shared passion for sensorial adventures.
Food and wine, paired at our table for the delight of palate and spirit, have filled my guests with joy and a time to remember. I cherish the wholehearted embraces, authentic smiles and sincere thanks...
This is my primary motivation for improving my skills as host and wine maker, that is to do everything is in my power to keep those hugs and smiles brightening my days. For many years, the energy coming from sharing my passion with my guests has been my lifeblood. And once back home my guests urged me, and they still do, to write a book with my favourite recipes and food pairings.
All this to bring home that lovely emotion that only the right food and wine pairing can offer you.
During this time in which our lives have been “put on hold” because of this long and insidious pandemic I have finally managed to write some simple recipes that I am proposing in this booklet paired with the appropriate wines. I hope with all my heart that these simple food and wine combinations, for those of you who wish to try them, will help you to re-create the intimate experience of being in Tuscany, while seated at your dinner table!
