Organoleptic Notes and Pairings
Colour: deep ruby red with light purple notes, verging on garnet with aging
Bouquet: strong, ample, with hints of cherry, raspberry and blackberry, with spicy and varietal herbs hints
Taste: with medium structure, warm, slightly tannic, large, velvety and elegant
To be served at: 18°C
Perfect foil with: game, seasoned meats and cheeses of young and average ripening, cow and goat cheese. For the many lovers of this variety is an exciting wine for meditative relaxation after dinner.
When twenty years ago we took over our small company overlooking the city of Siena, in addition to a very small plot of Merlot, we planted also 7 rows of Cabernet Franc. The first in Tuscany, not to be difficult, but because studying our terroir we realized that it had the characteristics that Cabernet Franc grapes, if properly ripened, well vinified and aged, could produce a wine maybe not for everyone, but exciting and with a strong personality. The first years frustrated our expectations, the wine ended up being too herbaceous and tannic but, since the tenth harvest, when the plants reached their physiological maturity, the big surprise was presented: a fruity wine where the raspberry replaced the herbaceous, of great body, intense and almost moving. Given the very small quantity we are able to produce, it has rightfully become part of the wines of our Personal Edition.
