Bouquet: complex, characterized by floral, citrus, tropical, mineral and spicy notes that turn to hydrocarbon and flint with ageing
Taste: good structure, harmonious, savoury, balanced, elegant, tending with ageing to creaminess and saline of the ancient sea from which it comes from
To be served at: 16°C
Perfect foil with: exciting with Catalan-style lobster and smoked wild salmon, excellent throughout the meal, with pasta dishes with white vegetable and meat sauces, pasta with lobster or mussels and fresh tomatoes, clams and roe, with fish and white meat main courses. Perfect also as an aperitif and with dish to hors d'oeuvres.
In our oldest vineyard that we have been working and cherishing for over 25 years, where, due to its exposure, the soil rich in cavernous limestone and fossil oysters, the climate always ventilated, ripen clusters of Vernaccia grapes as yellow as gold, crisp and concentrated, in the last five years we have identified about 400 vines, less productive, but much richer in sugar and acidity. From these fruits, comes the Vernaccia Riserva Personal Edition, unique and unrepeatable, both for the exclusivity of the bunches and for the method with which we make it.
